Cheesecake Bars & Heart Songs

This past weekend we had my great aunt and her family over to visit.
Mom and I are always looking for an excuse to try new recipes and had spotted this one in our little weekly advertising newspaper. A little country gal submits about 3-4 recipes a week, sometimes she has a theme like, zucchini or peaches and other weeks she just shares yummy recipes people have sent to her.

This wee country newspaper comes in the mail and is filled with things people want to sell like animals, services, & haybales to name just a few. This is also the newspaper that you find the listings for the farm and estate auctions. In the spring, country greenhouses will place ads to let us know when the tomato plants are ready! In the summer & fall I look in the paper to find out where to go and pick berries & apples.

This recipe was VERY quick and VERY easy. And let me tell you...I LOVE cheesecake! My son thinks these are the VERY best things he has ever eaten. But then again, he thinks most everything is the best he's ever eaten...he is 13 and growin' like a weed, 'about to eat me out of house and home!

One other thing I would like to share...
I don't like to watch the news much these days, especially the local news, it comes from Kansas City. Too many sad things, a lot to do with children and dying.
I have just had to stop watching it.
I wish they would share with us good and happy things, I know there are lots of good things going on everyday, there simply has to be...

Here is my
Make Your Heart Sing Story...
Mom and I were leaving the antique mall yesterday, and the parking lot was just a sheet of ice. I had shuffled to the back of the van, to stash a new purchase (more about that later) and had made mom stay on the sidewalk, so I could help her to get into the van.
I could hear some voices and I peeked around the corner of the van and saw a young girl helping my mom get to the van. She opened the door, she held her hand and her back, she held mom's little package & purse, she helped boost her into her seat (mom is only 4'10").
I beamed at her...and thanked her and thanked her...I'm not sure she spoke much English, but she knew what I meant.
She grinned back at me, my heart was singing!
Oh gosh, I am such a sap, here I am wiping tears as I type this, there goes the eye makeup.
There is good in this world...there are GOOD souls in this world, black, white, brown, color doesn't matter to me, what's in the heart does!

what a good thing! Love the recipe i completely understand about your son eating you out of house and home. Noah is the same way always with the endless pit.

I have said the very same thing about the news lately. It's too depressing to watch. Thank you for sharing the "good news" of someone helping a stranger and making someone else's day a little brighter. I hope I can be just like the stranger who helped your mom to the car and maybe make someone else's day a little brighter too. You just made my day! Thank you*

Jill - you are a woman after my own heart. Sometimes I read your blog and I just feel like you and I are kindred spirits. Honestly, if I didn't know any better, I'd think we were separated at birth. Except I'm 6" tall, so that's not a possibility - HA! Anyway, you are GOOD people! Tell your Mom she did good!

I agree the hearts actions speaks volumes! I too have chosen not to watch the news. I don't know who thought viewers only wanted to see and hear about death and gloom. I'd watch it if encounters like yours and your moms were aired.

The bars look like trouble with a capital "T". What kind of cheesecake mischief are you trying to get us into? Don't you know I can't resist anything made with CREAM CHEESE? Sweet story and you are right, this world is still chock full of good kind people, blogland proves it to me each day. The news on the other hand is as always doom and gloom. We don't always watch either. I tried to comment yesterday about your beautiful bathroom and it was a no go. I love your bath. I do the water trickle thing also. It keeps my water warm and is relaxing too.

Your whole house is perfectly beautiful. You have done a wonderful job.

Have you seen the baby chicks at the farm centers. I have wondered if you have your babes yet. I hope my chickens "sit" this spring and hatch some babies. Someday I have to post about my chicken I call Josephine. She has become a real pest. If I step into the kitchen for just a moment to get something and leave the back door open, she helps herself and comes on in. Only about 2 foot or so, but it is so cute to see her standing in the breakfast nook. She makes a funny sound and she is wanting bread is the reason she tries to come in. My husband says I'm a crazy Elle Mae Clampett girl.

I know exactly what you mean about not watching the news. I often remind myself that there is more good than bad in the world. Sometimes it's hard to believe that and then one small gesture, such as the nice lady helping your mother, can assure me that there are still many good people.

I make chocolate cream cheese cupcakes that are so good, but this looks easier and just as delish! I can't wait to try them! I am going to make them tomorrow!
